Basically UIDH will help the wireless provider to track your activity and display ads based on your browsing.

Can I be anonymous Online ?

It can’t be seen or changed in the device’s browser settings. Deleting your browser cookie will not kill the inserted cookie (UIDH), because it is inserted automatically in every HTTP request. This allows third-party advertisers collect your web browsing habits without your consent.
